Chiles en Nogada

One of the most representative dishes of Mexico.

It is only served seasonally and consists of a poblano pepper (green pepper) stuffed with pork and veal mixed with fruit (banana, apple ...) bathed in a white sauce made from castile nut and covered with pomegranate and parsley.

The color of its ingredients, green, white and red, represent the colors of the flag of the Republic of Mexico.

Given the seasonality of its ingredients, they are only served in July, August and September, this last month coinciding with the holiday of the Independence of Mexico.
