The dish par excellence of Yucatecan cuisine, is pork marinated in achiote (one kind of red spice cultivated in the Caribbean) and according to the traditional recipe, cooked in a banana leaf and baked in an earth oven.
It is served with purple onion and habanero chili sauce (the latter is always brought separately).
It is eaten with corn tortillas as if they were tacos.
